At about 30 kilometers from Verona lie the Soave vineyards. Located on the southern slopes of the mount Monte Lessini who protect the region against the cold Northern winds. The Best wines come from the Soave Classico region, closely located to the old Soave city where part of the vineyards grow on vulcanic soil.
This Soave Classico DOC from Sartori is a blend from the Garganega (90%) and Trebbiano di Soave (10%) grapes. The vineyards were both of the grape varieties come from have either a vulcanic or marl soil. After a soft pressing the wine is fermented at low temperatures followed by a maturation in stainless steel tanks and partially on small and medium sized oak casks.
The wine has a pale yellow colour with a golden reflection. The nose is clean and delicate with notes of exotic fruit, blossom, white fruit and peaches. The palate is fresh followed by drying notes and the typical Soave almond bitterness in the finish. This wine is best served with snacks, starters, light pasta dishes and fish.
