The Sartori Regolo Rosso Veronese IGT 'Ripasso' comes from the hills North of Verona. This region is known for it's sheltered environment with a long and stable autumn and is closely located to lake Garda. Mount Monte Lessini protects it from the cold Northern winds.
This Ripasso is 100% made of the Corvina Veronese grape coming from vineyards with a marl soil. Already in the vineyard the best bunches are selected. After a gentle bruise a period of cold maceration of 8-10 days follows. After that the fermentation process is started followed by a second one in February, together with peels of the Amarone wines. This gives the wine more structure and aromas of dried fruit the Amarone wine has. For 18 to 24 months the wine matures in medium sized oak casks followed by a 6 months maturation in the bottle. The result is a ruby red wine with a pomegranate coloured shine. The nose is filled with intense and long aromas. The palate is powerfull and dry with a silky texture. Beautiful aromas of black cherries and dried fruit develop and return in the finish.
This wine is best served in combination with game meat, grilled red meat and old cheeses.
