The Sartori Pinot Grigio Arcole DOC comes from the DOC Arcole region about 10 kilometers south of Soave in the Adige valley. The flatter surface in the South-West part of this region is very sandy with marl slopes and some clay. Both soils are very appropriate for viniculture.
This 100% Pinot Grigio is vinified according to the modern method. It is fermented at a low temperature and matures shortly in stainless steel tanks. The wine is bottled young so all the fruit aromas can still do their work. The result is a light straw yellow wine with aromas of peaches, honey and Acacia. The palate is dry but mild with not too many acids.
Best served within two years after harvesting and at 10-12°C in combination with salads, fingerfood, insalate capreses, grilled tuna, smoked fish, antipasit, cold meat, olives and a variety of cheeses.
