Milk & Honey Levantine Oak Aged Gin (50cl)

The Milk & Honey Levantine Oak Aged Gin is an Israeli gin from the Milk & HOney distillery. As base it’s made the same way as the single malt from the distillery, from 100% malted barley. For the gin a selection of juniper and botanicals from the Levinksy market are included These are: cinnamon, chamomile, black pepper, lemon peel, verbena, coriander and hyssop. At Milk & Honey they let the botanicals rest in the still for 24 hours and then distill it for the third time in their Gin-Genie 250L pot still, for extra smoothness. For this Oak Aged version the gin matures in red wine barrels for a couple of months giving it gentle wood and vanilla notes. The gin is bottled at 46% ABV in a 70cl bottle.

Aroma: gentle scent of juniper berries, lemon and hyssop accompanied with delicate wood and vanilla in the background

Palate: medium body, a little oily. very subtle wood flavor, vanilla and citrus combined with spices, lemon and juniper

Finish: a long lemon finish, a bit spicy, the herb flavors stays in the mouth for a long time along side a gentle wood flavour
